Terre Siciliane IGP

A wine that indicates "serenity of mind", instilling in those who taste it a feeling of immediate happiness. The PaxMentis Syrah of Tenute Orestiadi comes to life from the vineyards of the hilly countryside of Gibellina, in the heart of Western Sicily, in an area historically suited to wine production. The bunches, harvested in the last ten days of September, partially and naturally wither on the plant for about 20/30 days. After destemming and crushing, and fermentation at a controlled temperature for 15/20 days, the product obtained is aged in French oak barriques for 12 months. The aromatic bouquet reveals sweet notes of freshly picked red fruits, plum and cherry in alcohol, accompanied by delicate hints of vanilla. The sip is full and enveloping, with a sumptuous, particularly fragrant finish.

Palate

Soft, well balanced. It gives a long finish, with a harmonious and pleasantly persistent aftertaste.

Vinification

The bunches harvested when perfectly ripe are dried in the fruit cellar for about 20/30 days. Destemming-crushing and alcoholic fermentation at a controlled temperature for about 15/20 days. Aging for 12 months in French oak barriques.

It goes well with structured first courses of the Sicilian tradition (spaghetti alla norma), semi-mature cheeses and game-based second courses (mixed grilled meat, baked lamb).

This type of soil is found on the gentle hills of the Trapani hinterland, rich in silty-clayey substances, compact and resistant to drought. Thanks to its characteristics, it is configured as an ideal habitat for the breeding of numerous varieties of both red and white berried vines and becomes for us the perfect soil for the cultivation of Syrah and Nero d'Avola, used not only in purity , also in a blend for the Orestiadi Ludovico, a wine dedicated to Ludovico Corrao and the flagship of the cellar.
